Beef Stew Served with Vegetable Whole Wheat Pasta
As a busy millennial mom, settling for quick comfort foods in the colder months can be really tempting – especially after a long day's work. On a Monday after working all day in pajamas, I really didn't feel like making dinner. But when a guilty feeling fell over me, I decided to make a meal that’s simple, flavorful, hearty and screams early holiday. This simple beef stew served with vegetable whole wheat pasta, is a perfect choice for a hearty weekday dinner. The wheat pasta, broccoli, carrot and peas made the texture of this dish irresistible. This meal even makes for a great winter Sunday dinner option.
A simple and hearty guilt-free winter meal
What you’ll need
- 2 pounds Beef Chuck
- 16 ounces whole wheat pasta
- 3 frozen broccoli
- 1 can carrots and peas
- 1 tbs salt and grounded pepper
- 1 tbs all purpose seasoning
- ½ cup vegetable oil
- 3 tbs Chief Green Seasoning
- Thyme leaves
How to make
Cut beef chuck into strips then season with salt, ground pepper, all purpose seasoning, green seasoning, thyme leaves, and garlic. Pour oil in large skillet and heat over medium heat. Add beef to skillet and cook until meat is tender and well-browned, frequently stirring and adding water when necessary. Add leftover seasoning and let simmer.
Meanwhile cook pasta according to instructions. Place another pot over heat with 1/4 cup water, broccoli, carrots and peas to steam for about 5 minutes. Drain water from pasta and vegetables then combine into one container.
